Culinary challenge... I need your help!

Thanks for your comment Dana!! To clarify...my family has been eating... ahem...frozen pizzas, many variations of pasta and tomato sauce, homemade waffles with berries & *whop* OR we end up eating out, which is neither healthy nor cheap. As much as I admire mothers who can make EVERYTHING homemade and organic, I can't pull it off at this point in our lives. Soooo, I would LOVE any recipes healthier than frozen pizza or KD that can be pulled together in less than 30 minutes :) Jon and the kids eat mostly poultry/pork, not beef so much.

I'm down to less than 4 months to finish off my PhD... I spend 20 hours (over 2 1/2 days) per week with the Community Mental Health Program at the hospital and try to squeeze my dissertation and other written requirements in during naps and after the kids are in bed. Then there's paying bills, doing dishes, washing floors, changing bums, washing toilets, doing copious amounts of laundry....you get the idea! Providing a variety of healthy meals for my family hasn't been a big priority...seriously... I just can't often pull it off. Soooo, this is where I need your help!!

I need recipes... simple, yummy, healthy meals that require little planning/prep... recipes that are tried and true... done in 30 minutes or less recipes (or crock pot recipes)...

They don't need to be vegetarian (Jon & the little Gomers are all carnivores!) If you have one (or many!!), please write it/them out or post a link in the comments section. Thank you sooooo much in advance!

Katarina had told me just how close we'll be! Actually, we had tried to buy a house on Dixon but it didn't work out. We'll have to get our kids together this summer, for sure.

I was also going to put some recipes on here, but I don't know your personal 'convictions' in what you feed your kids or if you have aversions...so I was thinking I could copy out a couple of my recipes but, in the end, you may not even like/want them. Are you guys pretty care free in what you eat? (Not that we're care free, but I know I'm not the granola mom that some of my friends out West are, and I'd be scared to cook for them for fear of forcing some kind of unorganic, unsprouted grain that would probably lead my boys to shoot blanks later in life. Seriously though, I care, but I'm not that kind of a gal. We limit sugar...and are careful about other things, but within reason, I think?

I'll get off my soap box, and just say that...I admire my friends for being so conscious about what they put into their and their kids' bodies. I just find it overwhelming when I start thinking about it, so I've decided to pray, "Bless this to our bodies" and trust that God is in control...

oops, I got back on....I'm getting off, I promise.

So, yes, we will be close. And, I'll just have to make you my sinful suppers some time! Talk to you soon,

ok, so I have to say sorry for that last comment...I hope it didn't seem like I was saying those things towards you. Either way here are two recipes that I love....one for the slow cooker and one that's quick and easy

BBQ beef on a bun
I use the slow cooker on low for 8-10 hours

4 lb. beef roast ( I use any size I have)
2/3 c. ketchup
2/3 c. barbecue sauce
3 c. sliced celery
1 1/2 c. water
1 1/2 Tbsp vinegar
2/3 c. chopped onion
1 1/2 Tbsp Brown sugar
1 1/2 Tbsp worchestershire sauce
1 tsp. garlic powder
1 tsp. chili powder
1/2 tsp. salt

Mix and pour over beef. Falls apart easily. serve on buns with mustard/horse radish/ mayo...

chicken or beef enchiladas

cube chicken (or use a ground beef) and chop onions and peppers (use any kind that you have on hand, or none) sautee all together, add garlic and salt if you prefer.

once your meat is cooke throw in a can of tomato sauce, 1 Cup of ranch or sour cream, and 1 Cup of cheese. simmer together until cheese has melted. Scoop it all onto a soft tortilla and fold it up like a burrito, (I can usually fill 8) put them in a cassarole dish and cover with taco sauce (found beside the taco shells in the grocery store. It's a runny sauce that you can get in either mild/medium/spicy) and more cheese. Bake at 350 for as long as you desire...the crispier the better, but 20 minutes should be good...or you could eat them as is. Serve with sour cream!

The other one that I love is a ham dinner
I take a ham and slice it and put the slices in a baking dish (usually a deep one) a Then you layer sliced potatoes with lots of sliced onions.

Before you do this, melt some butter (I just put two big spoonfulls in, the more you use the better/fattier it is of course) and cook some onions in it with some mustard powder (or you can use some dijon, it's good either way) I pour this over the layers of potates and ham...and then cook fr an hour and a half to two hours at 350.

This is one of our favorites and I've noticed that the more butter and onions I use the better it is.

I hope these are practical!

Lezlie, I came across this recipe on a blog tonight..and I did think of you because you can eat it too! (Mind you, I'm sure you can add chopped up meat to it if it's for the rest of the family). Anyways, I thought it looked pretty good and I may give it a try one day. I've cut & pasted:


Crockpot Potato Curry
You can of course, substitute any other leafy green for the spinach in this recipe. I often use silverbeet (swiss chard) or kale for this recipe when I don't have any spinach available, and the curry in the photo was made with red mustard leaves.

It is a mild curry with a little tang which my kids enjoy, so ramp up the spices for a more adult heat hit.



Ingredients
1 large onion, chopped
2 cloves garlic, crushed
4-5 medium potatoes, chopped
Large bunch spinach leaves, stalks removed and leaves roughly chopped
1 400g tin diced tomatoes, or equivalent fresh
1 tsp ground coriander
1 tsp ground cumin
freshly ground black pepper
dash of chilli or cayenne powder, optional
1 tbs olive oil or ghee


1. Heat oil or ghee in crockpot on high, add onion, garlic and spices and stir until fragrant.

2. Add potatoes and tomatoes, and cook on low for approx. 5 hours.

3. Add spinach or silverbeet/ chard and cook for another hour on low, until potatoes are tender.

Serve on rice or naan bread.
